Using premium Wichita pork ribs, this recipe brings a fiery-sweet chipotle maple glaze that delivers bold flavour with a touch of finesse. Whether you’re elevating a weekend special or adding flair to a bar menu, this dish is your go-to showstopper.


Serves 4–6 as entrée or 3 as a main





Ingredients

  • 2kg Wichita pork ribs

  • 1 tsp flaky salt

  • 1 Tbsp oil

  • ¼ cup chipotle in adobo, finely chopped

  • 2 Tbsp maple syrup

  • 1 Tbsp apple cider vinegar

  • 1 Tbsp brown sugar

  • 1 tsp garlic powder

  • Hot water (to thin the glaze as needed)


Method

1. Low and slow: Season your ribs generously with flaky salt and a drizzle of oil. Wrap in foil and roast at 160°C for 2.5 hours until tender and juicy.

2. Make it sticky: While the ribs are roasting, combine chipotle, maple syrup, vinegar, brown sugar, and garlic powder in a small saucepan. Simmer gently until the sauce thickens into a glossy glaze. Add a splash of hot water if needed to reach your desired consistency.

3. Bring the heat: Unwrap the ribs, brush generously with the chipotle maple glaze, and return to a hot oven at 200°C. Roast uncovered for 10 to 15 minutes, until sticky, charred, and caramelised.

4. Finish strong: Serve hot, garnished with grilled lemon wedges and pickled onion for a punch of acid and contrast.
