Spring menus are all about contrast - fresh produce, bright flavours and vibrant colours paired with just the right amount of indulgence.

That’s where Westgold butter and cream come into their own.

Rich, smooth and incredibly versatile, Westgold dairy can help chefs add flavour, texture and a premium finish across the menu. From butter boards and crispy flatbreads to seafood, seasonal vegetables and spring desserts, a little dairy can go a long way.

Butter, but make it a menu feature

Butter doesn’t have to sit quietly on the side of the plate.

Whipped and flavoured butters are an easy way to turn a familiar ingredient into something guests remember — whether served with warm bread, melted over proteins and vegetables or used to finish a dish.

The On The Menu Spring feature showcases four combinations to get the ideas flowing: https://inspiration.mybidfood.com/nz/fresh/on-the-menu/2026/otm-spring-2026/?page=18

Garden herb butter

Chives, parsley, garlic, spring onion and lemon zest create a fresh, versatile butter that works beautifully with chicken, fish and vegetable dishes.

Hot honey butter

Hot honey, chilli flakes and smoky paprika bring together sweet, spicy and savoury flavours. Try it with steak, roast chicken, waffles, eggs or Mexican-inspired dishes.

Chilli, herb & lime butter

Fresh chilli, coriander and lime zest make this a natural match for seafood, BBQ meats and Asian-inspired menus.

Parmesan, garlic & truffle butter

Rich and savoury, this combination pairs particularly well with fries, meat and seasonal asparagus.

A selection of flavoured butters can also become a dish in its own right. Create a butter board flight served with breads, waffles or vegetables, or offer different varieties alongside grilled meats and seafood.

Give savoury dishes a creamy twist

Westgold cream offers plenty of opportunities beyond sauces and desserts.

Its smooth richness can balance the fresh, sharper flavours that come into season during spring. The Spring issue pairs cream with ingredients including asparagus, fennel, tangelo, rhubarb and eggplant, allowing fresh produce to remain the hero while dairy adds body and indulgence.

For an alternative to a traditional tomato-based flatbread, try a whipped garlic and parmesan cream base, then build it up with spring vegetables.

One idea from On The Menu combines crispy flatbread with savoury garlic and parmesan cream, grilled miso eggplant, pickled fennel, sumac, basil and hot honey — layering creamy, tangy, sweet and savoury flavours into every bite.

Finish spring on a sweet note

Cream also provides the perfect canvas for spring fruit.

Sharp rhubarb and tangelo pair beautifully with richer dairy flavours, creating desserts that feel indulgent without becoming overly heavy.

It’s a simple example of how seasonal ingredients can be transformed with just a few complementary elements.

One ingredient. Plenty of possibilities.

From a flavoured butter melted over steak to a whipped cream base under seasonal vegetables, Westgold gives chefs plenty of room to put their own signature on a dish.

Use it to add richness to:

  • breads, flatbreads and grazing plates

  • steaks, chicken and seafood

  • fries and roasted vegetables

  • spring produce such as asparagus and fennel

  • cakes, tarts and seasonal desserts

The result is dairy that works harder across the menu — delivering flavour, versatility and plenty of opportunity for creativity.
