Summer salads

Delicious salads incorporating some of our best Exclusive Brands products!


Kumara & Orange Salad

WITH ROCKET, SHAVED FENNEL & CLEMENTINE VINAIGRETTE


Kumara – diced and roasted till tender

Orange – sliced into 5mm rounds

Rocket

Fennel – shaved


Prepare the kumara, orange, rocket and fennel as stated. Combine the rocket, kumara and orange, then top with the shaved fennel.


CLEMENTINE VINAIGRETTE

Zest and juice of 2 Clementine’s

1 tablespoon honey

2 tablespoons apple cider vinegar

1/3 cup olive oil

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste


Mix together the ingredients for the Clementine vinaigrette until well combined. Drizzle the vinaigrette over the salad to finish.



Moroccan-Spiced Pearl Cous Cous Salad

WITH KALAMATA OLIVES, FETA, POMEGRANATE & HARISSA DRESSING SALAD


Kalamata Olives – drained (sliced or whole)

Feta – crumbled

Pomegranate seeds

Capsicum – diced

Pearl couscous (prepared as per packet)


HARISSA YOGHURT DRESSING

2 Tbsp Harissa sauce

3 Tbsp Greek-style yoghurt

1 Tbsp Tahini

Pinch of sea salt


MOROCCAN SPICE MIX

1 tsp ground cumin

1 tsp ground ginger

1 tsp salt

¾ tsp black pepper

½ tsp ground cinnamon

½ tsp ground coriander

½ tsp cayenne

½ tsp ground allspice

¼ teaspoon group cloves


Prepare the olives, feta, pomegranate seeds, capsicum and couscous as above.


Combine the spices to create your Moroccan spice mix.


Sauté the capsicum in oil and season to taste with the spice mix. Mix together above ingredients until evenly combined. Mix together the ingredients for the harissa yoghurt dressing until well combined. Drizzle the dressing over your salad to finish.
