Ingredients

For the Sandwich:
  • Rump steak cut, room temperature

  • Salt and freshly ground black pepper

  • Olive oil

  • Butter

  • Red onion, thinly sliced

  • Brown sugar

  • Balsamic vinegar

  • Crusty baguettes or ciabatta rolls

  • Provolone or Swiss cheese

  • Wild rocket


For the French Dip Sauce (Au Jus):
  • Butter

  • Garlic, minced

  • Worcestershire sauce

  • Soy sauce

  • Beef stock (preferably low-sodium)

  • Fresh thyme

  • Salt and pepper to taste


Method

1. Caramelize the Onions

In a skillet over medium heat, melt butter and add the sliced onions. Cook slowly for 15–20 minutes, stirring occasionally, until golden and soft. Add brown sugar and balsamic vinegar in the last 5 minutes to deepen the flavour. Set aside.


2. Make the French Dip Sauce

In a small saucepan, melt butter and sauté garlic until fragrant (about 30 seconds). Add Worcestershire, soy sauce, beef stock, and thyme. Simmer for 10 minutes until slightly reduced. Season to taste and keep warm.


3. Cook the Rump Steak

Season steaks generously with salt and pepper. Heat olive oil in a skillet over high heat. Sear steaks for 2–3 minutes per side for medium-rare (adjust for your preferred doneness). Let rest for 5 minutes, then slice thinly against the grain.


4. Assemble the Sandwich

Slice the bread and toast lightly. Layer with cheese, warm steak slices, caramelized onions, and arugula if using. Pop under the grill or broiler for 1–2 minutes to melt the cheese.


5. Serve with Dip

Pour the hot au jus into ramekins or small bowls. Serve the sandwiches with the dip on the side for dunking.
