Plum Chutney



Ingredients


  • 1 small onion, diced (166359)

  • 4cm piece of ginger, peeled and finely grated (around 30–40g) (165097)

  • 1kg of Billington (Christmas) plums, seeds removed, cut into large cubes (165208)

  • 2 apples, peeled and grated (168105)

  • ¾ cup malt vinegar (11016)

  • 1 cup water

  • ¼ cup soy sauce (172586)

  • ¾ cup brown sugar (172800)

  • large pinch of chilli flakes (172057)

  • 1 tbsp Chinese five spice (172060)

  • ¼ tsp cloves (172065)

  • good grinding of pepper (172999)

Method


1. Place all ingredients into a medium sized saucepan. Bring to a simmer then turn the heat down and reduce into a thick chutney (about 1 hour).


2. Pour into sterilised jars and seal
